Important Equipment: Springform Pan

A springform pan consists of two parts: a flat bottom, and an outer ring that is expandable. Be sure the outer ring is tightly closed and the bottom firmly in place before pouring your cheesecake mixture into the pan. After cooling, once the cheesecake is set up, you can "unbuckle" the springform pan and remove the ring, making the Greek yogurt cheesecake simple to serve without damaging the edges of the cheesecake.

How to make Voskos Greek Yogurt Cheesecake

Health benefits of Greek Yogurt

Now, no sane person would consider cheesecake to be a health food. But making this luscious dessert with Greek yogurt adds extra protein and reduces the fat content, so you can feel slightly less guilty when eating it.

To get the most health benefits from Greek yogurt, enjoy it at least once a day in its refrigerated form. Refrigeration preserves the healthful strains of probiotics that are included in every cup. According to the Council for Agricultural Science and Technology, probiotics can help to relieve and prevent digestive issues such as diarrhea, constipation, inflammatory bowel disease, ulcers, allergies and lactose intolerance. There is also some emerging clinical evidence that the probiotics found in Greek yogurt may also enhance immune function and protect against colon and bladder cancer.

If you want to cut the calories and carbs a bit more in this Greek yogurt cheesecake recipe, you may want to try substituting some of the granulated sugar with a low-calorie, low-carb sweetener such as stevia (an extremely sweet extract from an herb). There are half-stevia/half-sugar blends available for baking that should work well as a substitute for granulated sugar.
